chore: target the modern 0.1.x bot line for a standalone build

examples/slack consumes the @copilotkit/* packages via workspace:*; a
standalone repo can't, so the bot deps point at the modern ^0.1.x line
(multi-adapter, modals, respondTo) plus runtime ^1.61.2, the TanStack AI
stack (ai/ai-mcp/ai-openai), @slack/bolt, and playwright.

Standalone `npm install` is pending publish: @copilotkit/bot-telegram,
-whatsapp, and -store-redis aren't on npm yet, and the set needs a
coherent 0.1.x release. Until then run it from the monorepo as
examples/slack. Dropped the stale minimal-bot package-lock.json.
