Now in devcontainers/features#894 , there's a fallback logic to install the previous version if the "latest" tags are missing any artifacts. Changes the version back to latest (default).

Currently,
git-lfsFeature builds are failing as thelatesttag available is 3.5.0, however, the corresponding releases are still not available. This PR, attempts to find a previous version in such scenarios
