Docker node usage

versions.json defines usage as:

      "bookworm": [
        "amd64",
        "arm64v8",
        "ppc64le",
        "s390x"
      ],

The s390x architecture variant for bookworm is no longer supported after 2026-06-10 and this date has already been reached.

s390x for bookworm needs to be removed from the configuration.
